Mint Simple Syrup
1 cup sugar
1 cup water
1 cup mint leaves, packet
Chiffonade mint leaves. In a saucepan bring sugar, water, and mint leaves to a boil. Stir until sugar is dissolved. Reduce heat and simmer undisturbed for 2 minutes. Pour through a fine sieve, cool, and bottle. Keeps for 2 weeks refrigerated.
Add 1/2 ounce of minted simple syrup to sparkling water or Prosecco for a refreshing aperitif, garnish with a fresh mint leaf.
